Dedicate some space for LXC/VM backups. Do some reading on how best to configure your overall storage. Charm of Proxmox is the ability to spin on and off different toys for your homelab, so backup is critical if you screw up. But it tends to snowball size wise, so plan accordingly

No, jokes apart, why would you? It runs pretty ok on a RPi3 and I have long migrated running it on a VM on Proxmox

Literally any that has an USB and is supported by Nut. Just put a small/old RPi with a Nut Server on its USB port and then add the Nut Integration in Home Assistant
