A close friend of mine proposed that I work on a private commission so I can practice this new price model, and get a better read on how long my process ACTUALLY takes.

That way, when I publicly accept comms, I can provide price estimates more clearly, and you can budget accordingly

As someone that works inconsistent hours, draws slower than the average(?) artist, AND struggles with chronic perfectionism on top of all that?

... Certainly doesn't make things any easier to calculate...

Unlike previous comms, I plan to charge by the hour at a flat rate, using a stopwatch to precisely log how much time I've spent working on it.

Only problem with that is.. I'm not sure how to accurately estimate a price when I have NO idea how many hours I usually take to produce my work.
