Ah damn. Well that debloat tool has been useful for a few PCs I've used it on now. I also use a custom power plan that helps with some of the OS's latency. Its not a big difference but still feels less sluggish.

Right? It really shouldn't but I think from 23H2 or 24H2, they must be using specific instructions or whatever hardware support and without it, its emulated.

You should be able to stick with Windows 10 and the extended updates.

Are you running a clean install or an inplace upgrade? Theres a big difference there from my experience.
