YMMV but I got a little dough proofing bag/box thing that really helps with temperature control in the winter. I just revitalized my starter to get back to baking and it works like a charm, though I'm ADHD braining the timer so I've ruined 2 loaves in as many days so maybe mmmv too. MMMMMMM bread.
