Ok so color is nice, no rise, cornflour on the bottom works well but needs to account for slight expansion.

And I need to nail my bulk fermentation, between timing, temperature, and working the dough.

So still lacking the air bubbles and tang, I think I need to have a warmer place to activate and proof consistently- also a couple more times stretching/folding (especially with an inclusion) and the final stitch during shaping to make sure it doesn’t fuse to the parchment paper
