Very slowly poached preferably overnight cut up quinces sugar syrup (equal sugar and water) to cover overnight in a very low oven hardly any faff but I think better than quince paste and more versatile

Most of the best ones of course are in Australia and New Zealand so not that hard, really. (Joke…)
