It is great here on Naoshima though we can’t quite talk our way into the Chichu museum which has been booked out for months lots of other to see though

Very slowly poached preferably overnight cut up quinces sugar syrup (equal sugar and water) to cover overnight in a very low oven hardly any faff but I think better than quince paste and more versatile
