I’m an old timer. The only thing I measure is warm water (1/2 gallon) about a tablespoon of salt, 1/4 cup or so of sugar, couple tablespoons of yeast and 7 heaping scoops of high gluten flour (scoop size is 24 oz). It works for me. I do state and county fairs

Absolutely! Put the bag in a ziploc bag then freeze that. I over ordered on my first event and did that and the next year it was still fresh and delicious.
