Looks like it has already been confirmed for a multi-platform release: Xbox, Switch 2, and PC (Steam & Microsoft). Interesting no PS release.

Just finished playing #TheAdventuresOfElliotTheMillenniumTales and it is such an awesome game. It reminds me of Brave Fencer Musashi back in the PS1 days. Finished it on hard mode and it took roughly 3-4 hours to finish the demo as I did a lot of discovery and did die a lot.
