This was a gnarly evening primrose root from the VB garden. I parboiled and roasted 5+ lbs this winter.
Delicious, but high in oxalic acid which gives some individuals a "sparkly" sensation in the mouth/throat.
This one grew in compacted soil. Normally, they look very similar to wild carrots

Leaving stems throughout the winter provides height for visual aesthetics. This also benefits birds who eat the remaining seeds. Larger stems become occupied by pollinators for hibernation

Plant more natives, leave the leaves, save winter "cleanup" for spring when the plants are active again
