I can’t recall exactly how many times I’ve made ravioli from scratch, but every time I look at this vegan creation of mine, the only memories are of how incomparably delicious it was.

This is a risotto-style whole grain rice dish served with marinated asparagus stems.
I had some left over green veg that I hardly knew what to do with so I thought I’d purée that stuff up so as to use it as the body of this vibrant vegan dish.

One of my favorite things to do is to pair fruits with vegetables.
This is raspberry and tomato pasta.

(It’s not rice, it’s a type of pasta shaped to resemble rice grains.)

Simplicity is key for me, especially since I try to showcase the uniqueness of each of the vegetables I use. Why over complicate food when each ingredient is its own superpower?

I made a vegan cottage pie but I added a tart shell just to make it more contained and a bit more elegant.

In regards to the filling, you would hardly tell the difference between this and the non-vegan version.

What inspired me when it came to this was the aim of doing something “controversial” with my cooking.
Instead of going with a traditional tomato base, I used smashed avocado for a green base that evokes Veganism.

I made this during the harsh Australian winter of 2025, working with what the season had to offer.
It’s Brussel sprouts, kale and beetroot served on mashed sweet potato.
I declared it a “winter masterpiece”.

It feels mostly embarrassing to call this a lasagne; my pasta sheets definitely didn’t get the memo since I obviously didn’t do something right.
Regardless, it’s a vegan lasagne and it was absolutely delicious!

I then embarked on an attempt to create a plant-based burger that would provide me with similar satisfaction; it was good and made me joyous.
If I had more bread-making experience, it would have been twice as good!
The secret ingredient to the patty was hard-work, creativity and meticulous research.

For as long as I’ve been vegan, I have staunchly believed that this path has always been awaiting my compassionate self.
The best part about it is that the plant-based lifestyle effortlessly draws me nearer to the Earth and it’s always delightful and beyond.
