Don’t forget hot Italian Purdy ran the system effortlessly to a SB appearance. I personally wouldn’t pay a QB that is just replicating what multiple other people have done

I should have gotten into this a while ago. Once you figure out your smoker and how to get its heat right it’s a very relaxing hobby

Took them off for the wrap and additional seasonings and sauce. They smell *right* so far (like brisket)

For context, here’s my smoker/grill combo, the blocks of wood being used, and the thermometer set up. Thermometer has 4 readings but only 1 active at the moment tracking grill temp at grate level.

Also been maintaining the clear smoke pretty well except for when a block goes out before I get the next one in

I’ve hit a decent cruising altitude. I have a small offset smoker since it’s a combo grill, one block at a time with enough, figured out where to set vent to keep it more to 265
