@saahildesai.bsky.social is spot on, we are in a golden age for pizza “sickos.” Since buying a reasonably affordable open fire oven, I’ve been able to obsessively make Neapolitan pies at home — for years I could only bake NY and Detroit style. www.theatlantic.com/magazine/arc...
