2nd day: mixed midday, gave 3 sets of folds (20 mins between), bulk fermented 1 1/2 hours on counter, put in fridge overnight.
Final day: preshaped, sat 25 mins, shaped, proofed 45 mins, fridged for 20 minutes and baked 25 minutes w/ steam at 475.
