Personally I've grown quite attached to refried sweet potatoes. Basically, you mash up some sweet potatoes, add a lot of butter, and fry them up like refried beans. You can go with lots of garlic and some chiles for hot ones or some cinnamon and a litttle sugar for sweet ones.
