We are delighted to report that participants in our most recent Veg Challenge, which took place in July, made significant progress in reducing their consumption of animal products! The full report is here: www.pdxveg.org/2025_report.
On the left is a 9 x 9 grid showing photos of two chickens, a turkey, a duck, a pig, a heart-shaped arrangement of fruit, a cow, a sheep, a school of fish, and two rabbits. On the right is a plot showing the before and after animal product consumption of 33 people who took the July Veg Challenge. Consumption per week decreased from 4.50 to 1.0 servings (median) and 9.62 to 4.41 (average). This decrease was significant based on the sign test, which yielded a one-tail p value of 0.0022. In this plot, each respondent was assigned one or two letters, and the before results are shown as red circles and the after results as green squares. We sorted the data by the lowest to highest consumption before the Veg Challenge. 20 of the participants decreased their animal product consumption (the green squares are below the red circles) and 6 increased their consumption.

100% #vegan Vtopian in #PDX is participating in @veganizerpdx.bsky.social’s #WorldVeganMonth celebration with a delicious Chili Bean Mac & Cheese special that benefits Farmageddon, our only local farm growing 100% veganic produce, which is at People’s Farmers’ Market on Wednesdays.
Chili Bean Mac & Cheese consists of rigatoni in a super creamy plant-based cheese sauce with black beans, corn, and tomato. Topped with breadcrumbs and chives. It was hearty, comforting, and satisfying.

The Red Velvet Waffle consists of a fluffy red velvet Belgian waffle with crisp edges topped with green pandan whip topping and horchata tres leches syrup. With a brilliant choice of flavors, this was as delicious as it was creative and beautiful with the colors of the Mexican flag.

The Soon To Be Famous Bowl consists of luscious melty Good Planet Foods cow milk-free cheddar and mozzarella, diced potatoes, roasted corn, scallions, lively, seasoned, crispy, meaty Buddy’s Steaks fried plant-based popcorn chicken, and gravy drizzle, plus Mama Lil’s peppers on a thick sourdough crust that has crispy edges and a light and airy crumb inside.

Happy Halloween! We are glad that there are delicious #vegan chocolates such as those from 100% vegan Missionary Chocolates in #PDX that not only spare the 🐄 but also are recommended by @foodispower.bsky.social because their 🍫 isn’t made from cocoa that was produced using child labor and/or slavery.
These are the delicious chocolate truffles from Missionary Chocolates that we enjoyed: Smoked Cherrywood Salted Caramel, Sweet Raspberry, Blood Orange, Peppermint Perfection (in green foil), Dark Chocolate Delight, Chai, Elderberry (Heart), Simply Expresso, Earl Grey, and Local Lavender.

villagekitchenpdx.com is a #vegan-friendly food cart in #PDX that serves Burmese fusion cuisine. The food is made from recipes that owner Awng Htoi brought with him from the Northern Myanmar home that he left as a refugee. The flavors are vibrant, multidimensional, and uniquely delicious.
On the left is the Paratha with Pumpkin Masala (vegan version with tofu). A fusion of Bangladesh and Burmese cuisine, this pumpkin purée curry with coconut milk and cream, potatoes, and tofu was hearty and richly flavorful. Served with a flaky buttery paratha. On the right is the Village Salad, which consisted of vibrantly flavorful hot and sour marinated green tea leaves in a cabbage salad with onions, garlic, tomato, ginger, crispy fried nuts and chickpeas. This is usually served with rice, but their parathas are so amazing that we chose to get one with this too.

We always enjoy returning to 100% #vegan and #gluten-free Happy Day Juice for their delicious and nourishing food. Right now, they have some delicious fall specials.
