Messing around on the cart last night. Made myself a Colcannon Hotdog for fun. Our handcrafted vegan dog on a toasted bun topped with traditional Irish Colcannon (potato, cabbage, plant milk and butter), green onions on top. Not too bad. ☘️

Cheat day breakfast: Tofu Scramble Burrito with Lite Life Bacon, Daiya shredded cheddar cheese and the excellent Tatemada salsa from Costco (shop @costco for their refusal to fold to anti DEI goons, btw), hash browns and some apple slices because I'm healthy LOL.

Made black-eyed peas and vegan ham back on New Year's Day but no luck so far. Was hoping someone would at least break an ankle or something. Maybe it doesn't work that way.

The cupboard was bare this morning, so I made a grilled peanut butter, mayonnaise and homemade pickle sando. Apparently, peanut butter and mayo sandwiches were a big thing during the depression. Not bad, but I probably won't make it again until the 🍊🤡 crashes the economy or I forget to go shopping.
