I learned that if you extend your finger and lift it up and down they do the same thing back to you. I'm not sure what means but they react to it.

May I add one thing to your excellent list of protest etiquette? If you carry a sign remember the Police often can't see your hands or if you are carrying anything. Don't give LEOs a reason to get nervous.
