I had to do a deep dive of Gumbo and learned about the lack of flour but abundance of sassafras trees in New Orleans at the time. I love the food history channels on YouTube as well. I don’t think I’ve ever had gumbo, now I’ll have to try it some time.

How did the gumbo turn out? What meat did you use? Now my tummy is rumbling talking about it lol
