It would work as veggie soup with more veggies and perhaps beans. But I cut up a rotisserie chicken into it and let it simmer a couple hours.

Veggie stock for chicken soup. Fronds from carrots. Carrot tops. Butt end of a bunch of celery and celery fronds. Sage, rosemary, thyme, and a couple of bay leaves. Later I added chopped onions, garlic, and mushrooms after I removed the first items. Then carrots, celery, mushrooms.
