Serve over stir-fried vegetables, fried tofu, and rice noodles.

It’s a light but salty sauce, with sweet and citrus-y notes. It’s great.

Lastly, the sauce needs a touch of citrus. You can use grated orange peel, but I use Keffir lime peels. They’re amazing, and you can get them from Épices en Cru at the Jean-Talon market here in Montréal. Be generous, but don’t add too much.

On top of that, add any spices you’d like. At a minimum, salt, pepper, garlic powder, and onion power. I’ve also added touches of curry powder or cumin in the past.

Start with equal parts soy sauce (for salt and flavour), maple syrup (for sweetness), and peanut butter (for the classic pad Thai flavour). I also add a touch of Teriyaki sauce and fish sauce.
