Agreed. I'd look for The New Best Recipe in particular. The Food Lab by Kenji Lopez-Alt is also an incredible resource for a huge variety of well tested recipes. Kenji is great at explaining the science behind why something is happening

For newer school Mexican, I think Rick Martinez does a good job, MI Cocina in particular. Oaxaca by Bricia Lopez is good and gets into regional specialties. I also like a book called Nopalito for a more Tex Mex vibe

For old school Mexican, you can't go wrong with any of Rick Bayless' books. They're well researched and extremely authentic, but some are 20+ years old, so not a lot of pictures

You should be able to find crab chips in Ohio. Lots of grocery stores carry them here in Cincy
