I do encourage people to stray from the recipe and salt / season the turkey beforehand.

I have tried it both ways and it’s so much more flavorful if you season it first (even if you have some crispy herbs you’ve gotta wipe off when it comes out). I also slather it in butter before cooking.

data.table is also better at most things but it's correct place is inside a wrapper function so you don't have to remember the weird syntax
