Spinach Lasagna Ingredients 2 Tbsp Olive Oil 1½ C Chopped Onion 3 Tbsp Minced Garlic 4 cans (14.5oz) Stewed Tomatoes ⅓ C Tomato Paste ½ C Chopped Fresh Basil ½ C Chopped Parsley 1 tsp Salt 1 tsp Ground Black Pepper 1 lbs Dry Lasagna Noodles 2 lbs Firm Tofu 2 Tbsp Minced Garlic ¼ C Chopped Fresh Basil ¼ C Chopped Parsley ½ tsp Salt ½ tsp Ground Black Pepper 3 pkg.(10oz) Frozen Chopped Spinach (thawed and drained) ½-¾ lbs Shredded Mozzarella Cheese ¼-½ lbs Shredded Cheddar Cheese Directions: In a LARGE saucepan, sauté the Onions over medium heat in the Oil until soft (about 5 minutes). Add the Garlic and sauté an additional 5 minutes. Combine the Stewed Tomatoes, Tomato Paste, Basil and Parsley with the sauteed onions and garlic. Stir well, add the Salt and Pepper, cover and let simmer on low heat for about 1 hour. In a LARGE bowl, dump the Tofu, Garlic, Basil, Parsley, Salt, Pepper and 1 pkg. of Spinach. Mash together using a potato masher or through your fingers. Mix it well either way. Grate the Cheeses and toss together (doesn't have to be perfect). Now Clean all the dishes in the sink as well as the sink itself. Boil the Lasagna Noodles for 9 minutes. Rinse well...Drain well...lay them out in the sink. Preheat oven to 400 F. Spread 1 C. of the Tomato stuff followed by one layer of Noodles. Cover with ⅓ of the Tofu/Spinach followed by a light sprinkling of the cheese combo. Top that with the 2 remaining packages of Spinach followed by 1½ C. Tomato stuff. Throw another layer of Noodles followed by another third of the Tofu/Spinach. Continue with some more of that cheese combo (a little more this time) followed by another 1½ C. Tomato stuff. Gently place a final layer of Noodles followed by the remaining Tofu/Spinach. Dump the remaining Tomato stuff over that and top with the remaining cheese combo. Bake for 20 to 30 minutes.
