Favorite hands down, Peony. Runner ups would be cactus flowers, lavender, cherry blossom, wisteria, plume roses and marigolds. Snap dragons and desert wild flowers are great and so under rated.

As long as it's established, I don't think it really matters when in the story. Personally, I love enemies to lovers so introducing isn't a big factor.
