I feel like spinach also went through a transformation from slimy grossness to deliciousness. As a child, it was lunchroom swamp slime, but now it’s a green delight that can be used in so many ways. Brussel sprouts are roasted with new flavors and textures now, and I’m a new fan. :)

These are really interesting to see. I’m not familiar with any of them. If I ever get invited to a gala or something formal, I want to have a dressmaker make me that stage dress.
