I hear you. To make a decent dahl (or at least one that my British Indian wife wouldn't bring up and wield the memory of it like a cudgel in an argument months later) requires a lot of garlic, ginger, chili, tablespoons of spices like cumin, and tumeric, onions, oil, salt, black pepper, etc etc.
