Overall, the recipe tastes exactly like I remember café de olla. It's nostalgic, sweet, and warm with the spices. The coffee mostly is in the background and primarily bitter. Not surprised by this. I am a bit surprised by the big cinnamon flavor, so maybe I need to use less.

The recipe calls for 60g of sugar, 2 cloves, 1 stick (8g) of cinnamon and 4 tablespoons of coffee, boiled in 1L water. I scaled that to 1/4. I am changing the coffee ratio to 75g coffee (french press recipe).
