That other brewery posting cat pictures is ripping us off. You can’t drink fancy beer here, but you can drink fancy beer at our taproom Mousetrap.
Barrel Aged Beer for Dealing with Your Job is now available at Mousetrap. Work is stupid. So keep your head down and stay sober enough to not get fired so you can afford this Scandinavian gløgg inspired ale double aged in Pinot Noir barrels as well as on additional virgin oak.

Not that I’d endorse this kind of thing, but if I was at Zoolights and I’d been trying to shepherd the kids around for 90 minutes in 25 degree weather, and someone who’d smuggled it in offered me a paper coffee cup of this, I would get down on bended knee and propose on the spot

The instructions said to rest for 4-6 weeks, but we tried the beer after 5 days and then racked it off the wood on the 7th day. Kind of like god or something.

And that seventh beer? Our way too easy drinking, heavy hitting malt liquor, Beer for Dealing with Your Family, is back!

While a great deal of the barrel aging comes from a 3 month holiday in French Oak Pinot Noir barrels, to enhance the oak character, we added medium/dark French oak infusion spirals to build additional tannic structure.

The chestnut color will get you ready for toasting next to an open fire. A cornucopia of red fruit, cinnamon, and spice and everything nice will unglaze your eyes from your screen and then the 12.5% abv will re-glaze your eyes for the push you need to get to the holiday break.

If you so choose, serve it warm to expose the alcoholic nip and further bring out the spice character and it will start feeling like a hot toddy.

On first pour, the uncarbonated, hazy elixir emits a warm and spicy aroma. The clean body perfectly blends spicy/sweet herbs, a nuttiness from whole leaf Darjeeling tea, a kiss of sweetness and a slick oatmeal body.

A long rest in 10 year old Heaven Hill Bourbon barrels adds layers of coconut, graham cracker, and bourbon soaked maraschino cherry. A decadent treat to larder away before the onslaught of winter. #chicagobeer #offcolorbrewing

Deep, gingerbread malt tones underlay a vibrant fabric of bright orchard fruits, spiced orange peel, and vanilla pralines with a long, lingering finish punctuated by flourishes of Tellicherry black peppercorns and rose water.

Aged honeycomb perches atop spiced apple cider acidity. Copper yellow in hue matching that of turning fall foliage leaving us with a profound acknowledgement of the passing of time and the inextricable end of all things. A sweet sort of sadness. #chicagobeer #offcolorbrewing

First impressions are an autumnal array of candied dates, plum, and cinnamon bread - luscious, supple, and rich. Wisps of cherry pie and pomegranate emerge and recede like the tides against a sea of ancient oak and weather beaten time.

All Whiskers Turn Grey - blends a single barrel of a batch of Whiskers which earned Gold at FOBAB in 2015. For the past decade, this barrel has patiently slumbered as the world around us has changed. Some things for the better. Many not. But nonetheless a reflection of all of it.

Dark green and similar in stature to Calamansi, Shikuwasa have an astonishingly acidic taste that becomes more balanced as they ripen to a soft, marbled yellow. Think of a cross between the perfumed, super tangerine highlights of Yuzu & the deep pepper & herbal notes of Sudachi.
