Hmm... I wonder if a "better" approach to get the baseline raster would be to rasterize the centre line to a 1/no data raster, multiply this by the dem, then use gdal fill nodata to fill with nearest neighbour interpolation (instead of idw).

Looks beautiful! (I'd love to see an update of that blog post which replaces the plugins with the builtin equivalent tools)
