TvC is so underrated. Back in the day when Capcom would include characters like the mech from Lost Planet was a wild time.

Blind Guardian is so good. Personally I'd either go with them, or maybe Wintersun - Time, from the same time frame.

There's so many good albums from back then. My third pick would probably be Scar Symmetry - Morphogenesis album.
