I guess that's mostly explained by generator templates being crowdsourced. There is no single person out there who can produce idiomatic templates for all of them. On the positive side, making improvements is just a custom template, and ideally PR, away.

github.com/OpenAPITools... has worked well enough in my experience. Caters not only to various ecosystems but also different libraries and frameworks within those ecosystems.
