You can safely try cultivated enoki. Should be able to find them in any Asian market (and some standard markets, too). They come fresh or canned usually, maybe dried too, idk.

Enoki are edible, and if you like east Asian food, you may have eaten some already. Cultivated enoki look much different. Big issue with wild foraging is that there's a look-alike that is deadly, a species of galarina.

What's stopping you from starting now? The beard takes time, but the other elements are obtainable. That and a little boldness to start out, but that gets easier in time.

They dry well, if you get them in the dehydrator once you get back from foraging.
