I visited Rome in 2001 and enjoyed it very much. The best thing I ate was Saltimbocca alla Romano, but ALL the food was so good. So much pride in the ingredients and how they were used. I respect that.

It, apparently, was first created by an Italian chef in the South of the US. Or that's what I've read. She's from a Sicilian family from Memphis, Tennessee, so it suits her style.
