Nice crumb, more open than I expected. Super intense sourdough flavor. Needs a bit of sweetness to balance the tart. A little maple syrup next time. 6/10 for a first try given it’s a freeform loaf from a high hydration dough.

The absolute worst part of bread baking when trying something new is the seemingly endless wait for it to cool before the first slice. I’m told patience is a virtue. The aroma has me feeling not too virtuous right now.

That shot will kick your ass but you’ll sleep better knowing you got it. Friends who got shingles assured me that any temporary discomfort from the side effects paled in comparison to the pain of shingles. Good on you.
