2 attempts - one where I made strands of dough then formed loops, and one where I made dough balls and then poked a hole. The second one works much better for me.
Using Brian Lagerstrom's recipe from YouTube. Not quite "1-hour" but pretty quick.

Sourdough bread 🍞
I used to have to go to the German deli that got their bread twice a week from the Hess Bakery in Tacoma. Quite expensive and a bit of a hassle. Then I figured out how to bake my own, and never looked back!
I wrote down the whole recipe only to find there's a length limit

Rye/Wheat bread - Mischbrot 🍞
Roughly 50% rye and wheat flour. I made these 2 loaves when I got a new larger mixer. Same dough; one baked in a loaf pan and the other one freeform.

Rye bread - 95% rye flour + sourdough. Pretty easy to make.
