Belated birthday celebration: cassoulet from a kit my brother sent, Kate baked a chocolate-stout cake and Evan brought ice cream and IPA, and we played my recently delivered Kickstarter reward, Stack O' Cats instead of D&D since Chris travels tomorrow. Fun night. Lots to be thankful for.

I accidentally double paid my mortgage this month, which means leaning heavily on my bean hoard for our meals. My brother decided to fancy that up for my birthday. What an exciting surprise!

Dinner Last Night: Baked Feta Pasta

I meant to post this last night but it was a long day and I pretty much ate dinner and went to bed. This would be extra good with some toasted breadcrumbs on top to gild the lily.

Oh, and I tried using the Instant Pot to make cheesecake! A mishap where I dropped the bowl of the food processor and cracked it notwithstanding, it was dead easy.

Dinner Tonight: Barley not-Soup

This can be put together in advance as a mix that just needs water and a can of crushed tomatoes to turn it into a meal in 35 minutes.

Mine simmered too high and became more like a risotto but it was still yummy.

I was the sous chef and Pramas is finishing the cook. The bag of potatoes I bought were of notably poor quality but we got there in the end.

Dinner Tonight: Quinoa-Black Bean Bowls

I made mine with a ready-to-eat quinoa-rice blend instead of cooking mine from scratch because I'm trying not to heat up the house any more than it is and used seasoned canned beans. It's a breeze to put together.
