Oh it's absolutely fucking gorgeous. It's a 12 hour drive tho (14 hours including ferry) so I only go every once in a while to visit family:

I have figured it out! It's the layers of the external copy above the background (and only them, not the background itself) that have to be edited for changes to save to the uv map/ texture:
