Fan speed is a slider hidden in accessory settings. It's not available on watchOS at all.

If the accessory reports that fan speed has 5 discrete levels instead of being a continuous 0-100, it still lets me move the slider smoothly, and then abruptly snaps to the nearest valid value.

Tapping on the current temperature (roughly the red highlighted area here) toggles the AC on and off, very easy to do by accident. Tapping anywhere else in the rectangle opens the thermostat UI.
