Apparently, the reason is because the Scripts directory is placed inside the parent Asset Forge folder, and so if I simply move it in the Asset Forge_Data folder, it fixes it and the generator seems to be working fine after that. Is that a bug or an intended behavior?

Hey, Kenney, I hope I'm not missing anything, but when I try to generate a random model (via File => Generate => ...), it says "File not found: .../Asset Forge/Asset Forge_Data\Scripts\<name-of-script>.lua
