I'm making a warming spicy potato, coconut & spinach soup which is ideal for a cold winters day!
1kg potatoes chopped
1 large onion finely chopped
2 garlic crushed
1 tbs of black mustard seeds
1 tsp turmeric
1 tsp garamasala
5 curry leaves
1 ltr veg stock
1 can coconut milk
1 bag spinach
