Some of my recipes for gingerbread like cookies have you spread them in a sheet pan and cut after baking. Or you can add a bit more flour if it doesn't set up.

The skins of grapes have tannins. Great for wine making, not so great for eating fresh.

You need to toast them. Walnuts skins are high in tannins, like red wine. Get rid of the skins et voila, they are delicious.
