Then let her have them! Some people do have naturally pointed ears IRL, though not as pronounced as in fantasy. It can even be a character plot point for her - perhaps other kids teased her as a kid, and now she's either self-conscious (wears her hair down to hide them) or loud and proud!

Putting the cookies immediately into a bag or sealed container when they come out of the oven goes a long way. Cooling gives off a lot of moisture, so keeping that trapped as they cool helps. I do this with a few types of cookies (molasses, peanut butter, etc) and they stay nice and soft.
