Ah, I see, since both models would perfectly share topology, the normals could be baked to vertex colors or attributes? but Idk if it would save a lot of labor but I'm wondering if its possible hehe

if i understand it right, you want the model to be all smooth but a normal map that bring the sharp edges again.
In that case, the normal High-to-Low baking can work, the model with sharp edges and creases should be treated as the Highpoly and the one fully smoothed the low poly.

Oh, and after converting I use the color ramp node to give the celshaded look.

I use a BSDF shader to get the values for the reflections and lighting then I convert it to RGB (It could be just grayscale) and apply the colors, the whole ship uses the same material, but the cockpit is fully metal and smooth so it's reflecting the HDRI
