This is somewhat true, but it's may be that it's just not a widely known dish. USA is really, really big with huge areas of sparse population and fewer opportunities to try different cuisines. The large metropolitan areas have plenty of people who enjoy curry, along with Mexican and Asian food, too.

I didn't own my dog. She was a member of our family, a partner in an arrangement where we fed and housed her and she guarded and comforted us. She brought love and joy and saved us all from sadness and depression. Godspeed, Awesome!

Trucks need limited menus that avoid fryers, with foods like barbecue that have already cooked overnight and can be dished up with baked beans and potato salad (quickly).

Tucson has a much lower cost of living than Flagstaff, but it does get very hot in the summer. There are several resorts and retirement communities that would help provide you with a client base. It's also very flat in Tucson, and stairs are rare.
