I was going to do the same thing but saw that an easier solution was to do the system transfer and then use the Island Transfer tool to move the Animal Crossing save back to the original Switch.

And if I'm not mistaken, the Nvidia Shield uses the same processor as the Switch. So porting that version might have been fairly easy.

That makes the most sense to me but I still want to see how it all works and if they do anything to patch games or do something else to improve them like PS5's boost mode.

Nintendo seems to be doing all the right things with the Switch 2 so far. BC was previously announced by them but the confirmation of it being for both physical and digital games is a huge win. Now I'm just hoping that original Switch games run better on Switch 2.
