Why's this matter? This improves your privacy.
If you are visiting Wikipedia, it uses HTTPS, and can see your activity. Wikipedia can see what specific topic you're looking at, but your telecom provider can't—same for anyone who sends them a valid legal request.
The alternative is a free-for-all.

So everyone knows, “Off the record” is not a magical incantation that binds people in media roles from publishing what you say. You need to confirm everyone is in agreement in advance.
