Backwards compatibility most likely, there are a lot of emojis that iOS 5 doesn't have, and the way images are sent are likely different now. 18 can support 5's methods but not vice versa.

There is a setting to turn off the death animation, and instead your screen just goes black. I agree seeing your cat die over and over isn't very pleasant.
