I think the word is also closer in meaning to what a mathematical proof is, i.e. it is the action of demonstrating/proving something, while “prueba” only speaks to an outcome (i.e. a proof)

My gut feeling is to go with “Demonstración:”. If you look at the Wikipedia page for “Demostración matemática”, you see that the term demostración is used more prominently.

They are mostly used interchangeably, but I think “demonstración” is more formal (but I can’t remember why). The word “prueba” is also a synonym for exam, so depending on the context using “demonstración” may be clearer.
