Ntfs read write from Linux works pretty well. But honestly, you will less and less use windows, making the requirement of sharing files obsolete

By experience, the best is to dedicate one drive to windows and the other to Linux. If I recall correctly, Ubuntu installer lets you select the drive. Maybe give it a try.
Personally Ubuntu is my goto distribution for just having things work quickly

On a side note, it has been more than 10 years since I entirely stopped with window. There is no point in still having it, as all I need as a dev and gamer works flawlessly with Ubuntu

Probably because you mounted the device. Boot usb key, do nothing except get into gparted. Normally live installers do not mount things

You are overthinking this, like I used to. Just make a single / ext4 partition. Swap? Just a file inside it. Use your distrib, then adjust.
