I use Eargasm earbuds (I have no connection to them, just a happy user). They filter out a lot of a noise and high range, giving you clarity on close folks, and filtering out folks further away (and noise).

I also add sriracha or a bit of gochujang to the batter. I like spice.

Mix the veggies into your batter.

Use small amt of cooking oil that supports higher cook temperatures.

Pour the batter/mixture into the pan, and spread out so that the pancake is thin. The above recipe makes about 3 med. pancakes. Cook 2-3 min per side. Check edges periodically.

Sure. Start with whatever kimchi you like.

1 cup cold water
1.25 cups flour (some folks say you can use pancake mix)
1 egg
Mix that together until smooth and slightly runny
Chop 1 cup kimchi (1/2 inch squares)
Slice, thinly, 1/4 of a med. onion
Add 1-3 chopped (2 inches) scallions.
